Description	Cultivated mushrooms have been used in pharmacy as a source of biologically active compounds including specific polysaccharides. Partially, commonly cultivated mushrooms of genus Pleurotus are interesting because of its glucans demonstrating great immunomodulation properties. Pleuran, specific glucan isolated from Pleurotus sp., has suppressive effect on tumour. Biologically active glucans itself or their complexes with proteins and other polysaccharides isolated from fruit bodies of these species are interesting for the preparation of novel food supplements. Soluble and insoluble polysaccharide fractions were isolated from fruit bodies of various species and strains of Pleurotus sp. by subsequent hot water and alkali extractions, α-amylase treatment, deproteinisation, dialysis and lyophilisation. Obtained lyophilisates of water and alkali soluble fractions as well as alkali insoluble precipitates were characterised by FT-IR, Raman and 13C CP-MAS NMR spectroscopy.
