Description
  • The pressure degradation of microorganisms is possible to describe, in the same way as thermal degradation, by means of value Dp, which is decimal reduction time (min), required for the number of microbial species to be reduced by a factor of 10 at a given pressure. It is possible to calculate of zp-value, which is defined as pressure increase (MPa) required reducing the Dp value by a factor of 10. Equation for baroinactivation is derived from TDT model (thermal death time) Dp = Dpref 10(pref - p)/zp , where Dpref is decimal reduction time at the reference pressure (min), pref is the reference pressure (MPa). This way was used for calculation of baroinactivation model parameters total number of microorganisms of pressurized germinated chickpea (Cicer arietinum L.), lentil (Lens esculenta MOENCH) and mung bean (green gram) seeds (Vigna radiata (L.) WILCZEK).

  • Inaktivaci mikroorganismů lze popsat podobně jako tepelnou inaktivaci pomocí hodnoty Dp (min), která vyjadřuje dobu tlakování, která je potřebná ke snížení počtu mikroorganismů o řád. Dále je možno vypočítat hodnotu zp (MPa), definovanou jako zvýšení tlaku, potřebné ke snížení hodnoty Dp rovněž o řád. Rovnice pro baroinaktivaci je odvozena z TDT modelu Dp = Dpref 10(pref - p)/zp , kde Dpref odpovídá referenčnímu tlaku (min), pref je referenční tlak (MPa). Tento postup byl použit k výpočtu baroinaktivačního modelu pro celkový počet mikroorganismů tlakovaných semen cizrny (Cicer arietinum L.), čočky (Lens esculenta MOENCH) a semen mungo (Vigna radiata (L.)
