  • Traditional open fermentation and lager tanks were during the last decades replaced in many breweries by large production units (cylindroconical tanks). By contrast, continuous beer fermentation using immobilized brewing yeast has found only a limited number of industrial applications. Continuous fermentation systems were condemned to failure due to several reasons. These include engineering problems, unbalanced beer flavor and unrealized cost advantages. However, recent technological and biological developments could provide a new stimulus to both research and application of this promising technology.

  • Tradiční fermentační nádoby byly v posledních desetiletích nahrazeny velkoobjemovými cylindrokónickými tanky. Naopak kontinuánlní kvašení piva našlo pouze omezené průmyslové využití. Kontinuální fermentační systémy byly odsouzeny k nezdaru hned několika důvodů. Tyto zahrnují: inženýrské problémy, nevyrovnanou chuť a nedostatečné ekonomické výhody. Avšak současný pokrok v oblasti technologie a biologie poskytuje nový stimul jak pro výzkumu, tak pro aplikaci této slibné technologie. (cs)
