  • Cílem práce bylo studium mechanismu imobilizace pivovarských kvasnic na částice mláta pomocí informací o fyzikálně chemických vlastnostech obou povrchů. Mechanismus imobilizace byl navžen následujícím způsobem: adheze buňka-nosič, shlukování buněk a adsorpce buněk. Možnost stabilní adheze buňka-nosič z hlediska volné interakční energie byl potvrzen a relativní příspěvek elektrostatických interakcí (DLVO teorie) a volné interakční energie byl diskutován. (cs)
  • The aim of this work was to study the mechanisms of brewing yeast immobilization onto spent grains particles through the information on physicochemical surface properties of brewing yeast and spent grains particles. Three mechanisms of brewing yeast immobilization onto spent grains carrier were proposed: cell-carrier adhesion, cell-cell attachment and cell adsorption. The possibility of stable cell-carrier adhesion regarding the free energy of interaction was proved and the relative importance of long-range forces (DLVO theory) and interfacial free energies was discussed.
