Description	Development and evaluation of analytical methods for determination of egg yolk content of egg liqueurs was aim of the project. Due to the high variability of the egg composition and a possible effect of processing to the composition of the product several chemical markers were taken into the consideration: dry matter, fat, cholesterol, fatty acids, phosphorus. The egg content was estimated according to multiple regression analyses of the calibration set (model samples) and to the data obtained for row materials and described in literature. The error of egg content estimation method was about 20-30%. Relatively high amount of samples wer found to be adulereted - 50% of egg liqueurs. (en) Prezentovaná studie se zabývá vývojem a ověřením analytických metod vhodných pro stanovení obsahu žloutků ve vaječných likérech Vzhledem k vysoké variabilitě ve složení vajec a předpokládanému vlivu použitého technologického postupu na výsledné složení vaječných výrobků byl analyzován následující soubor chemických parametrů pro podíl žloutků: obsah sušiny, celkového fosforu (spetrofotometricky), tuku (extračně), cholesterolu (plynovou chormatografií), mastných kyselin (plynovou chormatografií). Výsledky rozborů modelových vzorků i vzorků z tržní sítě získané jednotlivými metodami pro byly statisticky zpracovány, vzájemně porovnány a kriticky zhodnoceny. V závěru práce byla diskutována přesnost, výhody a nevýhody navržených metod stanovení (odhadu) vaječného podílu a zároveň byly posuzována kvalita vaječných likérů na českém trhu. (cs)
