  • Vlastnosti rýže po mikrovlnném ohřevu byly hodnoceny pomocí amylografu a na základě enzymově stanoveného obsahu celkového a poškozeného škrobu. Nalezené hodnoty poškozeného škrobu jsou v souladu s amylografickou hodnotou maxima viskosity. Amylografické characteristiky ukazují na minimální změny u rýže s počáteční vlhkostí nižší než 23 %. Results of starch damage determination are in accordance with amylographic readings of changes in maximum viscosity. Amylographic characteristics shows on minimal changes resulting from MW treatment of rice for moisture lower than 23 %.
