Description
  • Rheological quality of dough prepared from 130 variety, stream and commercial flour samples (harvest 1999, 2000, 2001) was assessed by an alveograph Chopin and flour spectra was measured on spectrograph NIRSystem 6500. A statistically significant dependence between predicted and measured values was determined in P and W characteristics in case of cross validation only at commercial flour sets but this parameters were succcesfully predicted by independent validation at set of all samples.
