Description
| - The objective of the present study was to investigate the effect of cooking and different copper levels on fatty acid profile of leg meat of broilers. The broilers were fed a diet supplemented with rapeseed oil, copper sulphate pentahydrate at 175 mg Cu/kg (group 2), 35 mg Cu/kg (group 3), 175 mg Cu on 1-14 days and 35 mg Cu on 15-42 days (group 4). Lipids of raw and cooked meat were extracted, transmethylated and methyl esters analyzed using Hewlett-Packard 5890 gas chromatograph. Cooking reduced concentrtion of tissue PUFA and increased concentration of SFA and MUFA fatty acids.
