Description
  • Milling and baking quality of selected set of spelt wheat varieties growed in ecological growing systém was evaluated and compared with the high-quality czech breadmaking variety of common wheat Hana. In comparison with the check variety Hana spelt wheatvarieties showed i higher value of TKW, ash content, protein content and wet gluten content. Quality of gluten evaluated with sedimentation value, was at spelt varieties lower in comparison with the check variety.
