  • Antioxidant activity was determined in a collection of Czech and foreign hop varieties. Differences in the AOX values between ihop varieties were determined. The highest antioxidant activity (70 - 80 % rel.) was measured in Saaz hops and the variety Spalter Select. Antioxidant activity in most varieties moved in the scope of 40 to 60 % rel. Part of AOX of hops is lost in the course of drying. The loss does not usually exceed 5 %. Drying also resulted in decrease of polyphenol compounds. Drying in belt and chamber kilns is comparable from the point of view of hop AOX. Milling of hops for pellets production had no significant effect on antioxidant activity. The same holds true for pelletizing of ground hops. Antioxidant activity of hops decreased in the course of storage in dependence on temperature and hop forms (raw hops, pellets). Temperature has no effect on antoxidant activity of hop pellets packed in a multi-layer foil without air access.

  • Antioxidační aktivita chmelů byla stanovena na souboru českých i zahraničních odrůd. Mezi odrůdami chmele byly prokázány rozdíly v antioxidační aktivitě, nejvyšší hodnoty (70 - 80 % rel.) byly naměřeny v Žateckém červeňáku a odrůdě Spalter Select. U většiny ostatních odrůd se hodnoty pohybovaly v rozmezí 40 až 60 % rel. Sušením chmele se antioxidační aktivita snižuje, ztráta zpravidla nepřekračuje 5% hodnoty. Sušení se projevilo i úbytkem polyfenolových látek. Mezi komorovou a pásovou sušárnou nebyl z hlediska antioxidační aktivity chmele zjištěn podstatný rozdíl. Mletí chmele pro granulaci nemá významný vliv na antioxidační aktivitu. Rovněž granulací mletého chmele se antioxidační aktivita prokazatelným způsobem nemění. V průběhu skladování chmele dochází k poklesu antioxidační aktivity různou rychlostí v závislosti na teplotě a formě chmele. Teplota nemá prokazatelný vliv na antioxidační aktivitu granulí, zabalených do vícevrstvé fólie bez přístupu vzduchu. (cs)
