  • The work presents the development of a simple, rapid and low cost method for the determination of some beer flavours as esters like isoamyl acetate, ethyl caproate, ethyl caprylate, phenyl acetate, ethyl caprate, phenylethyl acetate, ethyl laurate, ethyl myristate and ethyl palmitate using stir bar sorptive extraction (SBSE). The combination of this extraction technique with solvent back extraction and subsequent gas chromatographic analysis with flame ionisation detection was used for the determination of these compounds. The difference between mixtures of organic solvents used for solvent back extraction as well as the influence of sampling time and time of solvent back extraction were studied. An optimum of SBSE method was developed.

  • Práce popisuje postup stanovení některých senzoricky aktivních esterů v pivu (isoamylacetát, kapronan ethylnatý, kaprylan ethylnatý, kaprinan ethylnatý, octan fenylethylnatý, lauran ethylnatý, myristan ethylnatý, palmitan ethylnatý) pomocí jednoduché, rychlé a levné metody extrakce na míchací tyčince (SBSE). Látky byly z piva vyextrahovány tímto extrakčním postupem a následně reextrahovány do organického rozpouštědla. Vlastní stanovení proběhlo na plynovém chromatografu s plamenoionizačním detektorem. Při vývoji metody byly odzkoušeny různé směsi organických rozpouštědel, doba extrakce a doba zpětné extrakce látek do rozpouštědla. Práce se zabývá nalezením optimálních podmínek pro SBSE extrakci těchto látekl z piva. (cs)
