  • Several techniques of sample preparation and assessment methods were tested for evaluation of antioxidant properties of hop and hop products. Hot water or methanol was used for extraction of antioxidants. The antioxidant activity was determined using the techniques based on the methods already published by Chapon (photometric determination with dipyridyl-ferric complex), Kaneda (determination with free radical DPPH) and Ushida (determination of the EPR-T150 value). Hot water extraction was used for further study of the antioxidant properties of various hops and hop products for simulation of conditions of hop boiling and the method of determination of the antioxidant activity with DPPH. Significant differences in reduction activities were proved among Czech hop varieties. Explicitly the best results were found for Saaz hops. No significant differences in reduction activities were found among hybrid varieties.

  • Pro hodnocení antioxidačních vlastností chmele a chmelových výrobků bylo zkoušeno několik postupů přípravy vzorků a metod stanovení. K extrakci antioxidantů byly použity horká voda nebo methanol. Antioxidační aktivita byla stanovena postupy vycházejícími z metod publikovaných Chaponem (fotometrické stanovení pomocí dipyridil - železitého komplexu), Kanedou (stanovení pomocí volného radikálu DPPH) a Ushidou (stanovení hodnoty EPR-T150). Pro další studium antioxidačních vlastností různých chmelů a chmelových výrobků byl zvolen způsob extrakce vroucí vodou z důvodu simulace podmínek chmelovaru a postup stanovení antioxidační aktivity s DPPH. Byly prokázány velké rozdíly redukčních aktivit mezi českými odrůdami chmele. Jednoznačně nejlepší výsledky byly zjištěny pro Žatecký poloraný červeňák. Mezi hybridními odrůdami nebyly nalezeny podstatné rozdíly redukčních aktivit. (cs)
