  • The aim of the study was to compare the quality of edible parts of three experimental groups of carp, i.e. pure line of Přerov scaly carp (PS), hybrid line of Přerov scaly carp and northern mirror carp (PSxM72), the hybrid line of Přerov scaly carp and Ropsha scaly carp (PSxROP), with the quality of edible parts of control hybrids of Hungarian and northern mirror carp (M2xM72) in harvest size (K 3 ). The chemical composition of edible parts of the experimental groups of carp (PS, PSxM72, PSxROP) was comparable with that of the control group (M2xM72). The highest fat content (89.8?1.94 g kg -1 ) was found in the fillet of PSxROP hybrids (P<0.05). Of EAA sum (48.54?0.31%) in the fillet of PSxROP hybrids, Lys (9.17?0.47%) and Leu (8.28?0.49%) were the most abundant. In comparison with organs, their fillet contained more His (4.38?0.34%, P<0.01), the ovaries more Val (11.65?0.37%, P<0.01) and testes more Ile (8.13?0.53%, P<0.01), Lys (11.70?0.63%, P<0.01) and Arg (10.44?0.27%, P<0.01).   • Cíl této studie byl porovnat složení jedlých částí těla tří experimentálních skupin kapra, to jest čistá linie Přerovského šupinatého kapra (PS), hybridní linie Přerovského šupinatého kapr a severského lysce (PS x M72), a hybridní linie Přerovského šupinatého kapr a Ropšínského šupinatého kapr (PS x ROP), s kvalitou jedlých částí těla kontrolních kříženců z maďarského a severského lysce (M2 x M72) v tržní velikosti (K3). Chemické složení jedlého podílu experimentální skupiny kaprů (M2 x M72). Nejvyšší obsah tuku (89.8?1.94 g kg -1 ) byl nalezen ve filetách hybridů PSxROP (P<0.05). Z EAAsum (48.54?0.31%) ve filetách hybridů PSxROP největší podíl tvořily Lys (9.17?0.47%) a Leu (8.28?0.49%).V porovnání filetu s ostatními orgány, filety obsahovali více His (4.38?0.34%, P<0.01), jikry nejvíce Val (11.65?0.37%, P<0.01) a mlíčí více Ile (8.13?0.53%, P<0.01), Lys (11.70?0.63%, P<0.01) a Arg (10.44?0.27%, P<0.01).
