  • 1) The best way how to improve the quality of milk products continually is to include any changes of raw material quality into payment of raw milk consistently. An algorithm (Programme IS QL ? Milk appreciation) was developed: SQSM is the sum of logically oriented DXs divided by the number of the really used MQIs; DX = (IND ? x)/sd; IND = individual value of milk quality indicator (MQI) of supplier, x = month average of MQI of relevant milk suppliers including IND; sd = its standard deviation. SQSM can consistently take into account the milk quality changes in its price. 2, I) Fatty acid (FA) profile as basis of raw milk fat structure is the important factor of biological value of milk foodstuffs. The aim of this paper was to extend the knowledge about current FA profile of cow milk fat as food raw material after period of expressive changes in dairy cow keeping. 64 bulk milk samples (BMS) were obtained in winter and summer season. 4 herds kept Czech Fleckvieh (CF) and 4 Holstein (H).
