| - Organic methods growing bread wheat may have negative effects on the technological value, especially in the case of the crucial crude protein content. The aim of paper is to identify diferences in quality of 8 varieties recomended in conventional or organic conditions in Austria and 2 strains. Obvious effect of year on the quality, set up in statistics, was confirmed for qualitative parametres. The correlation analysis also provides similar figures. - Systém pěstování pšenice v ekologickém zemědělství má negativní efekt na technologickou jakost (především obsah hrubého proteinu). Cílem práce je identifikovat rozdíly v pekařské jakosti odrůd, které jsou doporučené pro pěstování v ekologickém nebo konvenčním pěstování v Rakousku. V roce 2006-2007 byl založen s 10 odrůdami pšenice seté maloparcelkové pokusy. Vybrané parametry pekařské jakosti byly hodnoceny pomocí NIR spektroskopie. Statisticky průkazný vliv ročníku na jakost byl jednoznačně potvrzen u jakostních ukazatelů. Vliv genotypu nebyl statisticky průkazný. Obdobné hodnoty vychází také z korelační analýzy. Vliv ročníku je v záporné korelaci k obsahu bílkovin (r = -0,66), k obsahu mokrého lepku (r=-0,46) a naopak v kladné korelaci k obsahu škrobu (r=0,78) a pádovému číslu (r=0,86). Vliv odrůdy je reprezentován statisticky neprůkaznými korelačními koeficienty.
