Description
  • This short review is focused on potato tuber proteins and their importance and potential application in practice. A new approach for classification of tuber proteins by molecular mass is mentioned inside. The main compound of this classification are patatin family proteins. Patatin proteins represent a family of immunologically identical glycoproteins with molecular mass of monomer about 40 - 43 kDa and they are considered to be main tuber storage proteins. The multiple enzymatic activities were also found in patatin proteins; lipid acyl hydrolase activity is considered as the most important. Enzymatic and other biochemical properties of patatin proteins define their future practical application in food industry.
