  • Cílem práce je rozšířit znalosti o současném aminokyselinovém (AK) profilu bílkovin krav. mléka jako potr. suroviny po období výrazných změn v chovu dojnic a o možných dopadech některých chov. vlivů na tento AK profil. Bylo vyšetřeno 17 AK. Hlavní AK byly kys. glutamová 5,93 g.kg-1 a 19,5 % a prolin 3,14 a 10,3. Nejnižší byly glycin 0,56 a 1,8 a cystein 0,18 g.kg-1 a 0,6 %. Hlavní esenciální AK byly leucin 2,89 a 9,5 a lysin 2,48 g.kg-1 a 8,1 %. Vliv plemene (České strakaté (CF) a Holštýn (H)) byl významný (P<0,05) pouze pro kys. glutamovou 6,02 > 5,83 g.kg-1 (absolutní, postradatelná). Všechny ostatní rozdíly byly nevýznamné. Absolutní obsahy cysteinu, histidinu a lysinu vzrostly (P<0,05) s vyšší dojivostí (MY) CF. Relativní obsahy cysteinu a lysinu vzrostly zatímco glycin klesl (P<0,01). Ostatní rozdíly byly nevýznamné. Změny byly v nepostradatelných AK. MY překvapivě mírně zvýšila nutriční biologickou hodnotu bílkovin (NBHB). Zvýšená MY sice změnila poměry v AK profilu, ale NBHB zůstala zachována. (cs)
  • The aim of paper is to extend the knowledge about current amino acid (AA) profile of proteins of cow. There were investigated 17 AAs. The main AAs were glutamic acid 5.93 g.kg-1 and 19.5 % and proline 3.14 and 10.3. The lowest were glycine 0.56 and 1.8 and cysteine 0.18 g.kg-1 and 0.6 %. The main essential AAs were leucine 2.89 and 9.5 and lysine 2.48 g.kg-1 and 8.1 %. The breed impact (Czech Fleckvieh (CF) and Holstein (H)) was significant (P<0.05) only for glutamic acid 6.02 > 5.83 g.kg-1 (absolute, non-essential). All other differences were insignificant. The absolute cystein, histidine and lysine contents increased (P<0.05) with higher milk yield (MY) of CF. Relative contents of the cysteine and lysine increased while glycine decreased (P<0.01). The other differences were insignificant. The changes were in essential AAs. MY increased nutritive protein biological value (NPBV) surprisingly a little. The increased MY otherwise changed proportions in AA profile but NPBV stayed well-kept.
