  • 20 crossbreed young (10 bulls & 10 steers) progenies of Galloway, Blonded'Aquitaine, Charolais and the three-breed crossbred bulls at the parental and Czech Pied at the maternal position, were fed on the same diet. Likewise, all rearing conditions remained constant. The mean age at castration was 122.6 d. There were found no significant differences in live weight gain or slaughter weight between bulls and steers. As concerned to the SEUROP, we found significant differences in the information between bulls and steers (3.60 = U - U-; 3.00 = R, respectively). According to the fat contend, bulls and steers belonged to the class 2. Cooking loss, beef tenderness, in terms of Warner-Bratzler shear force values, and maximum stress by TPAcompression test have been investigated. The values of the three parameters were determined after 2,8,15,22, or 29 d of ageing of the meat samples at 2-4 °C and after cooking 1 hour at 70 °C (the internal temperature). Values of CL,WBSF, TPA were higher for bulls. (en)
