Description
| - The raw milk quality (RMQ) is an important factor of the dairy food chain safety. The cow RMQ had been compared during a ten-year period in the Czech Republic. A marked improvement was observed both in compositional and especially health and hygienic indicators. E. g. the arithmetical means of the total mesophilic bacteria count were 203.8 ths.ml-1 in 1994 and 44.5 ths.ml-1 in 2003 (today 37.4 ths.ml-1). Also the decrease of the occurrence frequency in the inhibitory substance residues from 0.64 to 0.24 % (today 0.17 %) was very important. A stagnation was stated in somatic cell count (x = 272 and xg = 228 ths.ml-1 in 1994; x = 252 and xg = 230 ths.ml-1 in 2003). The current quality is quite comparable with dairy developed countries. A consistent link between milk quality and price is necessary. The aim was to develope a new standardized indicator of milk quality (SQSM) which includes all values of used milk quality indicators (MQIs) into one figure and balances relevant price premiums by penalties. - Kvalita syrového mléka (KSM) je významným faktorem bezpečnosti mléčného potravinového řetězce. KSM krav byla v České republice srovnána během desetiletého období. Bylo pozorováno zřetelné zlepšení jak u složkových ukazatelů tak zejména u zdravotních a hygienických ukazatelů. Např. aritmetické průměry celkového počtu mikroorganismů byly 203,8 tis.ml-1 v 1994 a 44,5 tis.ml-1 v 2003 (dnes 37,4 tis.ml-1). Také pokles frekvence výskytu inhibičních látek z 0,64 na 0,24 % (dnes 0,17 %) byl velmi významný. Stagnace byla konstatována v počtu somatických buněk (x = 272 a xg = 228 tis.ml-1 v 1994; x = 252 a xg = 230 tis.ml-1 v 2003). Nynější kvalita je docela dobře srovnatelná s mlékařsky vyspělými zeměmi. Nezbytná je důsledná vazba mezi kvalitou mléka a cenou. Cílem bylo vyvinout nový standardizovaný ukazatel kvality mléka (SQSM), který zahrnuje všechny hodnoty použitých ukazatelů kvality mléka (KUSM) do jednoho čísla a vyrovnává odpovídající cenové příplatky prostřednictvím srážek.
