  • Redukční aktivita byla stanovena pomocí technik založených na metodách publikovaných Chaponem (fotometrické stanovení s dipyridyl-železitým komplexem), Kanedou (stanovení s volným radikálem DPPH) a Ushidou (stanovení hodnoty EPR-T150). Metoda podle Kanedy stejně jako metoda podle Chapona je použitelná pro stanovení antioxidačních vlastností chmele, metoda podle Chapona je méně citlivá. Stanovení s DPPH bylo provedeno jak s EPR detekcí, tak s detekcí fotometrickou, výsledky vzájemně dobře korelovaly. Redukční aktivita methanolových extraktů chmele byla vyšší nežli extraktů horkou vodou z důvodu rozdílného spektra extra-hovaných látek. Pro další studium bylo použito výluhu horkou vodou a stanovení redukční aktiv-ity s DPPH. Byly zjištěny významné diference mezi českými odrůdami v antioxidsační ak-tivitě.Nejlepší výsledky byly stanoveny pro Žatecký poloraný červeňák. Malá část redukční ak-tivity se ztrácí v průběhu sušení chmele, úbytek zpravidla nepřesahuje 5% původní hodnoty. Sušení v komorové a pásové (cs)
  • The reducing activity was determined using the techniques based on the methods already pub-lished by Chapon (photometric determination with dipyridyl-ferric complex), Kaneda (determi-nation with DPPH free radical) and Ushida (determination of the EPR-T150 value). The method according to Kaneda as well as the method according to Chapon is efficient for hop antioxidant properties determination; the method according to Chapon is less sensitive. Determination with DPPH was performed using photometric and EPR detections, results of both detection principles were in a good correlation. The reducing activity of methanol extracts of hops was higher than of hot water ones due to a different spectrum of extracted substances. Hot water extraction and re-ducing activity determination with DPPH were used for further study. Significant differences in reducing activities were proved among Czech hop varieties.
