  • Problém kvality potravin se dotýká všech zemí. K jeho řešení se používá mnoho chemických, biologických a fyzikálních metod. Hlavním problémem u stárnutí biologických buněk je ztráta vody. Článek přináší studii závislosti napětí v buňkách, které klesá se stárnutím vzorku, přičemž se stav polarizačního maxima posouvá. Vztaj stárnutím masa a změnami polarizačního stavu je v článku diskutován. (cs)
  • The problem of food quality is very important issue concerning all countries. To solve this task, many different chemical, biological and physical methods are constantly developed. The main problem which comes through the biological cells is the water loss. As a result, the strain in cells is decreasing with product aging and polarization maximum of light is consequently shifting. The relationship between the polarization changes and meat freshness is reported.
