  • The effect of pH was studied using lactic, acetic and hydrochloric acids plus sodium hydroxide on the production of staphylococcal enterotoxin H (SEH) in various strains of Staphylococcus aureus. Furthermore, influences of temperatures were examined. The lowest pH at which SEH was still detected was dependent not only on the acid used but also on the given strain. The smallest inhibitory effects on the production of SEH were shown by hydrochloric acid. The lowest pH value at which SEH production was still observed was 4.2 in strain SA 1184. This strain was able to produce SEH even at pH 10.6, which was the highest pH value among the strains studied. The lowest temperature at which SEH production manifested was 25°C in two strains, while the highest temperature at which SEH was produced was 42°C, in all four studied strains. SEH is produced within a wide pH range but the influence of temperature is an essential one for the production of this toxin.
