  • Viry způsobují velké množství onemocnění rostlin, zvířat i lidí. Tyto patogeny jsou striktní intracelulární parazité s buněčnou specifitou jejichž replikace je zcela závislá na hostitelské buňce. K přenosu virových částic dochází různými způsoby mimojinéi kontaminovanými potravinami a vodou. Lidé se nejčastěji nakazí perorální cestou pozřením produktů kontaminovaných během výrobního procesu. Tento článek je zaměřen na nejvýznamnější původce onemocnění z potravin rodů Norovirus, Enterovirus,Hepatovirus,Astrovirus a některé další. Rovněž jsou diskutovány metody detekce virů v potravinách a možnosti prevence šíření virových infekcí potravinami. (cs)
  • Viruses cause many diseases in plants, animals, and humans. They are strict intracellular parasites with cellular specificity. Viral particles can be transmitted by different routes, such as contaminated food and water. People usually get infectedorally,after ingestion of products contaminated during processing or subsequent handling or preparation. This review article is focused on the most severe foodborne viruses specific for humans, of the following genera: Norovirus, Enterovirus,Hepatovirus, Astrovirus, and some others. Methods for detecting viruses in food and strategies for preventing virus transmission via food are also discussed.
