Description	The time temperature histories of perishable foods after shopping and during home refrigerator storage were studied. RFID based storage thermometers were used to predict mean temperature histories and mean storage times in both parts of the after shopping history. The data gained were transformed into frequency distribution functions. These functions were used for microbial risk assessment case study of potential Listeria monocytogenes (LM) growth and survival. @risk software was applied for Monte-Carlo prediction of distribution function of the final LM concentration. Sensitivity analysis has been done to predict the most important factors influencing the final concentration and to determine the most promising factors for decreasing the risk of violation of legislation given microbe concentration over the shelf life of the products. (en) Hemos estudiado el historial de temperatura de los alimentos perecederos después de su compra y durante el almacenamiento en el refrigerador del hogar. Se utilizaron registradores de datos de temperatura basados en el RFID para predecir el historial de temperatura media y de los tiempos medios de almacenamiento en ambos periodos a partir de su compra. Los datos se transformaron en funciones de distribución de frecuencia. Esas funciones fueron utilizadas para un caso de estudio de la evaluación del riesgo microbiológico de un potencial de crecimiento y supervivencia de Listeria monocytogenes (LM). Se utilizó un software @risk para generar una predicción Monte Carlo de la función de distribución de la concentración final de LM. Se llevó a cabo un análisis de sensibilidad para predecir los factores más importantes que influencian la concentración final y para determinar los factores más prometedores para disminuir el riesgo de incumplir la legislación sobre las concentraciones microbiológicas durante la vida útil de los productos.
