  • High pressure treatment (so called cold pasteurisation - HPP) has already found its place in the food industry in niches wherever it is beneficial. A very promising area of HPP application is production of functional foods of plant origin such as juices. HPP can not only save the natural character of the product but also its biological activity. The goal of this article is to fairly compare the thermal and HP pasteurisation effects on sensory and biological quality of one functional food – apple broccoli juice produced by HP technology in the Czech Republic.
