  • Nedávné studie uvádí, že alergenicita jablek může být pozměněna zpracováním vysokým tlakem. Byli testování pacienti trpící alergií na pyl břízy. Byly provedeny testy stanovení specifické IgE protilátky na alergen pylu břízy a jablka, kožní prick to prick test s komerčním standardizovaným alergenem jablka, s čerstvým jablkem a jablečným extraktem ošetřeným vysokým tlakem při 400,500 and 550 MPa po dobu 3 a 10 minut. Kožní test s čerstvým jablkem byl mnohem citlivější než test s komerčním alergenem u pacientů trpících orálním alergickým syndromem. Zjistili jsme pokles alergenicity u materiálu modifikovaného vysokým tlakem 400 MPa po dobu 10 minut a 450 a 500 MPa ošetřeným po dobu 3 a 10 minut. Naopak, u materiálu ošetřeného při tlaku 550 MPa po dobu 3 minut nastalo mírné zvýšení reakce v rámci kožního testu. (cs)
  • Recent studies reported that allergenicity of apple can be altered by high pressure (HP) treatment. Patients with allergy to birch pollen and apple were tested. Specific IgE to birch pollen allergen and apple, skin prick test with standardised commercial apple allergen extract, fresh apple modified under the pressure of 400,500 and 550 MPa for 3 and 10 minutes, prick to prick test with fresh apple were performed. Prick to prick test with fresh apple was more sensitive than skin prick test with commercial apple extract and specific IgE to apple in patients with oral allergy syndrom.We found decrease of allergenicity with material modified with pressure 400 MPa for 10 minutes and 450 and 500 MPa for 3 and 10 minutes. On the contrary, the material treated at condition of 550 MPa for 3 minutes caused mild increase of skin prick test reactivity.
