  • Nedávno byly určeny závislosti součinitele přestupu tepla (SHTC) mezi prostředím obchodní vitríny a modely plastických kelímků vloženými do vitríny v otepleném stavu, Hoke et al (2007). Tyto závislosti byly aplikovány pro numerické výpočty časových průběhů teplot modelové potraviny - měkkého tvarohu. Bylo provedeno experimentální ověření výpočtů. Kelímky naplněné tvarohem byly vloženy do prostředí vitríny v různých uspořádáních okolí. Tato uspořádání byla shodná s tím, za nichž probíhalo stanovení korelací mezi SHTC a rozdílem teplot objektu a prostředí. Tři velikosti kelímků a tři uspořádání vrstvy byly zahrnuty do studie (kelímek samostatně stojící na regálu, jedna vrstva kelímků, dvě a tři vrstvy kelímků). Okolí měřeného kelímku s tvarohem tvořily tytéž kelímky naplněné vodou a ty byly buď ohřáty na teplotu místnosti nebo byly vychlazeny na teplotu vzduchu ve vitríně před vložením do vitríny. Byly porovnány vypočtené a naměřené časové průběhy teplot tvarohu v kelímku. Dobrá shoda výpočtu a experime (cs)
  • Recently the surface heat transfer coefficient (SHTC) versus temperature difference delta T correlations have been extracted from experiments with plastic cups filled with metal models of foods input into the refrigerated display cabinet, Hoke et al. (2007). These correlations have been applied for numerical prediction of time-temperature histories of model food – fresh cheese known as a quark. Experimental verification of calculated predictions was made. The cups filled with quark have been input into refrigerated display cabinets. The cups, geometry and arrangement of experiment used were identical as that used for prediction of correlations of heat transfer coefficients. Three sizes of cups and three arrangements of layers of cups have been studied (cup standing alone on the floor of display cabinet, one layer of cups, three layers of cups eventually two layers of cups).
