Description
  • Exact design of the equipment of thermal treatment of dried egg white by the dry heat needs to know the relevant values of physical properties of this product. The bulk density, water activity, specific heat and enthalpy will be presented as a function of temperature and humidity. Water activity was measured as a function of humidity and temperature for de-sorption process that mimics the real conditions during dry heat processing in pilot hot-rooming equipment. DSC method was used for prediction of enthalpy of the product as a function of temperature during de-sorption of humid egg whites starting from different levels of the humidity.

  • Pro přesný návrh zařízení pro tepelné zpracování sušeného vaječného bílku při sušení suchým teplem je třeba znát fyzikální vlastnosti produktu. Hustota, aktivita vody, specifické teplo a entalpie budou prezentovány jako funkce teploty a vlhkosti. Aktivita vody byla měřena jako funkce vlhkosti a teploty pro desorpční proces napodobující skutečné podmínky během sušení v pilotním zařízení. Měření pomocí DSC bylo použito pro určení entalpie produktu jako funkce teploty během desorpce vlhkého bílku při různých počátečních vlhkostech. (cs)
