Description
  • The aim of the present study is to evaluate the nutritional factors of the underutilized cereals (spelt, emmer, einkorn, millet, foxtail millet, semiperennial rye, naked oat, neked barley) and pseudocereals (buckwheat). The basic food components as well as minot nutrients were determined. The analyses include dry matter, ash, protein, dietary fibre and fat fat determination. The attention was aimed at the determination of fatty acids, amino acids, minerals, lipophilic and hydrophilic vitamins. In case of buckwheat rutin was followed. The authors hope to offer the new recipes for the healthy food production and for special dietary use (diabetes coeliac disease, PKU diet etc.). Use of the germinated seeds is also suggested. The examples of some healthy food products in the Czech Republic are mentioned.
