Description
| - The dry and 4,6 and 8 days germinated buckwheat seeds of diploid variety %22PYRA%22 and tetraploid variety %22EMKA%22 were analysed for their nutritional value. The basic chemical composition of dry seeds and content of mineral elements (except Na) of the both buckwheat varieties were similar. The significant differences (less than 31 %) between the varieties were determined in content of rutin and sodium. Tetraploid variety %22Emka%22 had relatively higher content of vitamins B1 (20,8 %) and B6 (19,3 %) than %22Pyra%22. There were determined only small changes in the basic chemical composition during the germination of the both buckwheat varieties. The content of rutin of diploid variety %22Pyra%22 after 6 days of germination reached 113 mg/100 g of DM and after 8 days even 156 mg/100 g of DM. The level of riboflavin was 2 times higher after 4 days, 3 times higher after 6 and 4 times (0,65 mg/100 g of DM) higher after 8 days of germination.
