Description
  • The selected sorts of the vine will be planted and their grapes will be used for juice preparation containing as much as possible bioactive compounds (resveratrol, direct antioxidants, fenolic substances). The standard and biological produce will be used. The physical treatment of grapes will be used to generate in grapes the bioactive compounds having the health benefit. The non-thermal processing of the juices such as high pressure pasteurisation will be used. The aim of this part of research will be to compare the content of bioactive compounds in standard processed and new methods processed juices. (en)

  • Na řešení projektu je patrné vysoké propojení s praxí a implementace do potravinářských provozů. Byly připraveny čtyři druhy biošťáv a hroznový koncentrát obohacený resveratrolem a kvercetinem. Řešení projektu a čerpání prostředků probíhalo v souladu s plánem. Cíl projektu byl splněn. (cs)
