The aim of project is analysis of occurrence of free and fixed forms of mycotoxins within the selected species of Triticum L.(common wheat, spelt wheat, emmer wheat), rye, millet and buckwheat in conditions of organic farming. Another aim is verification of plants ability to transform toxin to conjugated masked form of mycotoxin and to evaluate occurrence of masked mycotoxins forms in frame of production process (transfer to selected cereal products). One part of the project is focused on determination of selected nutritional factors and sensory analysis of bakery products from cereals and pseudocereals grown in conventional and organic system of agriculture. Effect of technological processing and culinary treatment on mycotoxin content will be followed and a proposal of a new bioproduct will be suggested as well. The addtional goal of the project is to estimate the interaction between primary contamination of cereals by moulds and secondary contamination by stored product pest organims. (en)
