Description
  • The project is proposed to search of ways how to increase the concentration of health beneficial fatty acids in milk fat by control of farm factors for possibility to process functional foodstuffs. The results can contribute to stability of milk production in the Czech Republic. The suitable background for separated raw milk procesing could be the enterprises with bio-production. It is necessary to support the possibility for enlargement of assortment by health favourable foodstuffs. The farm factors as area and character of animal keeping, type of nourishment, health state of animals in terms of production disorder impact including the possibility of nutrition for ensuring of concentration increase of health positive fatty acids. The stability of fatty acid concentration in milk during its processing onto milk foodstuffs in basic technological directions for milk processing will be also investigated by model tests. (en)
  • Určit faktory ovlivňující zvýšení koncentrace zdravotně významných mastných kyselin v mléce. Navrhnout postupy získání funkční potravinové suroviny. Zpracováním metodiky přispět ke stabilizaci mlékařství a podpořit zdraví spotřebitelů.

  • The project aim was to determine factors influencing the increase in the concentration of fatty acids significant for health present in milk and to propose procedures to obtain a functional food ingredient. The preparation of the methodology is to contribute to stabilization in the milk industry and support the consumers’ health. The project developed in keeping with the plan. (en)
