Description
| - Essential oils, specific fractions usually obtained from plant material by steam or hydrodistillation, have been used in different cultures for their antiseptic qualities since antiquity. Essential oils are variable mixtures of monoterpenes, sesquiterpenes and other low molecular hydrocarbons and their derivates. Their antimicrobial properties have been assessed in many studies, from which it is clear that these compounds have potential in procedures and applications in the pharmaceutical, cosmetic, agricultural and food industries. In addition, essential oils possess a unique property of high volatility, which is not seen in other antimicrobial agents and its use in vapour phase is attracting much attention. In spite of modern improvements in agriculture products and food production techniques, food safety is still an important aspect of public health issue. It has been estimated that as many as 30% of people in industrialised countries suffer from a food borne disease each year. At the same time, in Western societies is an increasing demand for so-called green food products with fewer synthetic additives but increased safety, quality and shelf-life. One of the possibilities how to meet this demand is the use of essential oils as antibacterial additives during production, storage and processing of agricultural products and foods. (en)
