| Description
| - The goal of this complex project will be investigation of the phenolic compounds distribution, especially gallic and caftaric acids, catechins, resveratrol, piceid and search for new stilbene derivatives, pterostilbene and pinosylvin in all parts of the selected European grapevine varieties and varieties of the interspecific crossing. Total amount of phenolic compounds, anthocyanins and sensoric aromatic profile will be measured. It is supposed to sample and to test 6 red and 6 white grape cultivars. The influence of mould Botrytis cinerea attack and other stress factors impact (dryness-irrigation) on the content of phenolic compounds in grapes and wines will be investigated. The content of phenolic compounds in the red wines during vinification and in the white wines the influence of technological modification, e.g. clarification will be studied. In all wine samples their antimutagenic properties will be tested by Ames test and antioxidative capacity by EPR spectroscopy will be measured. (en)
- Cílem předkládaného komplexního projektu bude sledování distribuce fenolických látek, zejména kyseliny gallové, kaftarové a dále katechinů, resveratrolu, piceidu a hledání dalších nových derivátů stilbenu jako např. pterostilbenu a pinosylvinu ve všech částech hroznů u vybraných evropských odrůd révy vinné a odrůd interspecifického křížení. Bude sledován celkový obsah fenolických látek, anthokyaninových barviv a senzorický aromatický profil. Předpokládáme odběr a testování nejméně 6 modrých odrůd a 6 bílých odrůd. Bude sledován vliv napadení plísní Botrytis cinerea a vliv stresových faktorů (sucho-závlaha) na obsah polyfenolických látek v hroznech a ve vínech. U červených vín bude sledován obsah fenolických látek během vinifikace (rototank, automatický vinifikátor, termovinifikace), u bílých vín pak vliv technologických úprav, např. čiření. U všech vzorků vín budou testovány jejich antimutagenní vlastnosti Amesovým testem a měřena antioxidační kapacita pomocí EPR spektroskopie.
