Description
  • The aim of this project is, on the basis of comprehensive laboratory analysis, to define particular parameters in which cow's, sheep's and goat's raw milk vary and how different methods of heat treatment may affect their sensorical and nutritional properties, quality and safety of milk. The project results will be used on the basis for national legislation and recommendations for the consumers. A sub-project aims to define particular criteria for evaluating the microbiological and hygienic parameters of milk, including milk from small ruminants and to establish the limits as the standard values ??applicable to all breeders.   • Na základě komplexních laboratorních analýz definovat, v jakých parametrech se liší kravské, ovčí a kozí syrové mléko a jak různé způsoby tepelného ošetření ovlivňují jejich senzorické a nutriční vlastnosti, kvalitu a zdravotní nezávadnost mléka. Výsledky projektu budou použity jako podklady pro národní legislativu a doporučení pro spotřebitele. Dílčím cílem projektu je definovat taková kritéria pro hodnocení mikrobiologické a hygienické kvality mléka včetně mléka od malých přežvýkavců a zavést tyto limity jako normované hodnoty platné pro všechny chovatele.
