Fytoestrogenní a mykoestrogenní látky v potravních řetězcích mohou ovlivňovat zdraví domácích zvířat i kvalitu živočišných surovin pro výrobu potravin. Pro možnost posouzení takových vlivů a zvýšení bezpečnosti potravinových řetězců je nezbytné modifikovat a implementovat analytické metody schopné detekovat mikromnožství těchto látek a jejich metabolické změny v různých bodech potravních řetězců a jejich eventuální biotransformace nebo bioakumulace. To znamená určit hledané cílové analyty a jejich deriváty v různých koncentracích a nejrůznějších materiálech. Pak je možné sledovat vliv těchto látek na zdraví zvířat, potravní řetězce a kvalitu potravin, od krmiv po potraviny. Navrhovaný projekt je zaměřen na výzkum a vývoj: - modifikací a implementaceanalytických metod s odpovídající citlivostí pro detekci xenoestrogenů v různých bodech potravních řetězců; - zmapování výskytu účelově vybraných xenoestrogenních látek fyto- a mykogenního původu v antropogenních technologiích typu potravních a potravin (cs)
The phytoestrogenic and mykoestrogenic substances, which sometimes occur in the food chains can affect the domestic animals health and animal raw material quality for foodstuff production as well. Therefore it is necessary to modify and implement the relevant analytical methods, which are able to detect the microvolumes of the above mentioned substances and their metabolic changes in the different points of food chains and their possible biotransformations or bioacumulations. It means, the determinationof the found target analytes and their derivates in different concentrations and different materials is very important for possibility how to judge the risk and impacts in food chains and how to improve the safety of foodstuff chains. After relevant analytical method development there is possible to watch the impact of mentioned substances on domestic animal health state, on food chains and on foodstuff qality, from feedstuffs to foodstuffs.
