  • Budou vypracovány metody HPLC stanovení vybraných potravinových alergenů (alergeny vajec - avidin, ovomukoid, ovalbumin; alergeny mléka - beta-laktoglobulin) a antinutričních látek obsažených v některých potravinách (lektiny obilnin a luštěnin, inhibitory proteas a amylas obilnin a luštěnin). Metody budou založeny jak na biospecifických, tak i biomimetických sorpčních metodách. Testovány budou i možnosti využití méně specifických metod jako jsou HPLC v reversní fázi a HPLC na ionexech. Výsledky budou uveřejněny v odborném tisku. (cs)
  • The methods will be developed and tested for the HPLC determination of selected food allergens (allergens of eggs - avidine, ovomucid, ovalbumine; milk allergen - beta-lactoglobuline) and antinutritional components appearing in some foods (lectins in cereals and legumes, protease and amylase inhibitors in cereals and legumes). The methods studied will be based on the biospecific as well as biomimetic sorption methods. Less specific methods like reverse phase HPLC and ion-exchange HPLC will be tested as well. The results obtained will be published in appropriate journals. (en)
