The project is focused on the possibility of influencing dietary value and especially fatty acid composition of beef by the application of molecular genetics methods. The objective of the project is to determine the association between stearoyl Co-A desaturase (SCD) genotype and fatty acid composition and to identify the role of the activity of this enzyme. The results of this project have the potential to contribute to the improvement of beef quality and to reduce the risk associated with the consumption of food containing fat with the fatty acid composition unfavourable for human health.
