  • Příspěvek je zaměřen na problematiku hodnocení kvality potravinářských výrobků spotřebiteli. Představuje metody senzorické analýzy a ukazuje možnosti jejich využití v marketingu v kombinaci se spotřebitelskými výrobkovými testy. V příspěvku jsou rovněž definovány zásady provádění senzorické analýzy. Problematika hodnocení kvality potravinářských výrobků je vymezena jak z teoretického, tak i z praktického hlediska. Na konkrétním příkladě je demonstrováno využití senzorické analýzy pro hodnocení kvality nových variant potravinářských výrobků. (cs)
  • This report focuses on questions of food products quality and its perception and evaluation from the consumers? point of view. It introduces the sensory analysis method and shows possibilities of its use in marketing in combination with methods and techniques of consumer product testing. It also deals with the principles of the performing of sensory analysis. The questions are not only theoretically specified; there is also a concrete example given to demonstrate the use of sensory analysis in consumer testing of new variants of food products.
