  • Triacylglycerols (TGs) form an important part of the human diet, serve as a source of energy stored in fat tissues, provide a thermal and mechanical protective layer surrounding important organs, and are a source of essential FAs, fat-soluble vitamins and other non-polar compounds. The main sources of TGs in the human diet are oil plants, and, especially, the oils prepared from them. Individual TGs can differ in the number of carbon atoms (CNs), the number of double bonds (DBs), and the cis/trans configuration of the double bonds. Also, different stereochemical positions sn-1, -2, or -3 of FAs on the glycerol backbone (regioisomers), or R/S optical configuration of TGs esterified in sn-1 and sn-3 positions by two different FAs (optical isomers), lead to enormous complexity. Two techniques of highperformance liquid chromatography (HPLC) are widely used in the analysis of TG mixtures: silver ion normal-phase HPLC, and non-aqueous reversed-phase HPLC.
