| - The aim of the present work is to characterize worts and beer polyphenols quantitatively and qualitatively in order to monitor the effects of technologies in the brewing process. In this work, samples were taken at various stages during the brewing process. The total polyphenol content was measured by applying the Folin-Ciocalteu method on the spectral colorimeter ?Spekol 11?. The analysis of individual polyphenols was carried out by using high pressure liquid chromatography (HPLC) with ultraviolet (UV) detector. When comparing the total polyphenol value measured by Folin-Ciocalteu method (ranging from 145 to 185 mg/L in the intermediates) with the total polyphenol value calculated as the sum of the individual polyphenols measured by HPLC-UV (ranging from 24.8 to 32.3 mg/L in the intermediates), the latter appeared to be inferior. The combination of these methods allows the determination of the concentration of each separated constituents, despite the absence of available standards.
