| - Práce popisuje účinek izostatického tlaku 500 MPa na tryptickou a chymotryptickou hydrolýzu ?- a ß-caseinu (?- a ß CAS), hovězího sérového albuminu (BSA), ß-laktoglobulinu (ß-Lg) a ?-laktalbuminu (?-La). Hydrolýza byla souběžně provedena i při atmosferickém tlaku. Rozsahy hydrolýz a peptidové profily byly analyzovány gelovou permeační chromatografií (GPC) a HPLC na reverzní fázi. Zbytkové imunochemické reaktivity bílkovinných hydrolyzátů byly stanoveny s použitím Streptavidin ImmunoCAP systému (Phadia) pro stanovení vazby specifických IgE protilátek sér pacientů alergických na bílkoviny kravského mléka. - This work describes the effect of isostatic pressure 500 MPa on tryptic and chymotryptic hydrolysis of ?- and ß-casein (?- and ß CAS), bovine serum albumin (BSA), ß-lactoglobulin (ß-Lg) and ?-lactalbumin (?-La). Digestion was also conducted at atmospheric pressure. The extent of hydrolysis and peptide profile were analysed by gel-permeation and reverse-phase high performance liquid chromatographies. The residual immunochemical reactivities of the protein hydrolysates were assessed by Streptavidin ImmunoCAP system (Phadia) for determination of specific IgE antibodies using sera of patients allergic to proteins of cow milk.
